- For the steaks: pound the steaks out as thin as possible, making sure to remove any sinue or fat
- Add 4 cloves of chopped garlic, some chopped parsley, pine nuts and sultanas to a bowl (the amounts are down to preference and taste). Mix them together.
- Distribute the mixture evenly between the flattened steaks. Grind some black pepper onto them before rolling them up and securing them with cocktail sticks
- Use a quarter of the glass of wine to braise the beef rolls until browned and sealed, and until the alcohol has cooked off. Leave these to one side
- Heat a large pan, and into it add chopped onion and garlic with a dash of olive oil and 1/4 glass of red wine
- When onions and alcohol have fried off, add tomato puree until onions are red. Then add the tins of tomato.
- Add salt, pepper, basil, sugar and oregano to taste. Add the balsamic vinegar but use very carefully!
- Allow sauce to simmer for 20 minutes and then add the remaining red wine. Stir. Add the bragiole rolls.
- Allow the sauce to cook on a low heat for at least 3 hours. I usually leave mine for about 8 and sometimes I leave overnight in a slow cooker. Remember- the longer the sauce cooks the richer it will be. Stir every hour or so.
- Serve the sauce with rigatone topped with parmesan, pepper and a basil leaf as a starter. Serve the bragiole rolls with a simple salad for the main course if you want the full Neapolitan experience!
